In shochu distilleries, it is common to remove impurities and adjust the taste and aroma by performing a filtration process at the end of the shochu production. Chokusho is produced with minimal filtration to preserve the natural aroma and flavor of the barley. As a result, due to temperature changes, fusel oil (which is essential for the unique taste and flavor of shochu) may solidify.
