A chic soba restaurant with meticulous attention to detail

Located in the Ainosato area of Sapporo, Hikoichi offers a chic and calming atmosphere where you can enjoy hand-made thin soba noodles. The vibrant spicy daikon and crispy vegetable tempura enhance the meal, making the sweet flavor of the soba even more appealing. The warm hospitality inside the restaurant is also comforting, allowing you to enjoy a cozy time with each visit. It's a wonderful place that makes you want to return again and again.

The kitchen visible from the counter is lively and exciting. The served soba tea is hot and fragrant, which lifts my spirits from the start. The thin soba is slightly gray, and its smooth texture and just-right firmness are pleasant. The broth is mild and smooth, with a hint of sweetness, making me drink it all the way to the last drop. A large egg mixture lightly covers the soba, and mixing it with tempura bits and sprouts changes the texture in a fun way. When I pour the separately served rich soba broth, the aroma of bonito rises, and I feel a sense of calm. The combination of tempura bits on rice with just a little soy sauce is light, and the pickles served on the side make for a nice palate cleanser. The interior is bright and clean, and the staff moves briskly, creating a comfortable atmosphere. There are also cold dishes like zaru soba and spicy grated daikon, suggesting a variety of flavors to enjoy.
