This is our most popular No.1 bread, made to highlight the natural flavor of wheat. It is delicious whether eaten as is or toasted, and is also used in our morning offerings. Baked at high temperatures unique to gas ovens, this bread has a fluffy and moist texture. It is made without additives (no emulsifiers, yeast food, preservatives, or flavorings) and does not contain eggs, making it safe for children with allergies to enjoy every day.
A carefully crafted product made with selected ingredients and the dedication of artisans. It features high-protein wheat, fermented butter that enhances richness and aroma, French 'Guerande salt' that even adds a hint of sweetness, and a blend of high-quality three-temperature sugar used in simmered dishes. The secret to the melt-in-your-mouth softness of the dough lies in the 'hot water kneading method' that uses not only water but also boiling water.
In addition to carefully selected wheat flour, we use Akō salt. Furthermore, we add 'white porridge' and make it with care. By increasing the starch content, we create a chewy and moist bread. Safe and secure, with no additives (no emulsifiers, yeast food, preservatives, or flavorings).
A deep flavor obtained through long fermentation and the aroma derived from koji. The elegant taste overflowing with natural essence is recommended for discerning customers who seek authenticity. We use a composite yeast made from 'wild yeast' collected from the upper reaches of the Katsuragawa River at the foot of Mount Tanzawa in Kanagawa Prefecture, combined with Japan's oldest 'koji'. The process from making the starter to baking takes 45 hours. It is made only with flour, sugar, Akō salt, composite yeast, and water. It is suitable for toasting as it contains no fats.
