Sitting at the counter, a bright and calm atmosphere spreads, and the conversation with the chef is immediately enjoyable. The small dish of shrimp and scallops served as an appetizer has a firm texture, raising expectations from the very first bite. Next, the yam puree and grilled firefly squid served are exquisite with their savory aroma and gentle saltiness. When I expressed my preferences, they prepared sushi mainly with shellfish like red clam and chicken clam, all of which were fresh and had an irresistible crunchy texture. The variety of toppings continued with amberjack marinated in soy sauce and sea urchin gunkan, showcasing the chef's skill. Thanks to the meticulous work and hospitality, the dining experience itself became a pleasant memory.
