I enjoyed a set of 100% buckwheat soba and a mini anago rice bowl at a restaurant I had been curious about after seeing its sign. The soba has a wonderful aroma, and while its texture is soft, it has a pleasant elasticity when bitten into. The dipping sauce has a gentle sweetness that enhances the flavor of the soba. The anago has a fluffy, melting texture that pairs perfectly with cucumber and wasabi. The addition of sesame, shiso, and sansho allows for a delightful variety of flavors, keeping it interesting until the end. The small side dishes of pickled white cucumber, hijiki, and wakame miso soup are also well-prepared, making for a satisfying overall experience.
