When I descended into the underground hideout, I was excited to see a showcase full of ingredients. I selected packaged vegetables and dried tofu into my basket, and the process of conveying my preferences for noodles, meat, and cilantro at the counter was interesting. I ordered wide rice noodles and lamb, received a number tag, and waited leisurely at the table. When my number was called, I received a bowl with a sesame-scented soup that was milder in spiciness than I expected. The crunchiness of the bean sprouts and lotus root combined with the flavor of the lamb made it impossible to stop eating until the end. I was also pleased that I could adjust the spiciness to my liking with the condiments on the table.
