True to the land of pure spring water, each dish has a clear and refreshing flavor. The dishes that utilize the blessings of the lake and local vegetables are not only visually appealing but also meticulously prepared. The carp sashimi pairs well with the vinegar miso, offering a refreshing mouthfeel. The grilled funazushi has a mellow acidity and a pleasant aroma. The dish featuring Omi turnip and the bowl with rich dashi convey the sweetness of the ingredients. Even the tempura and sesame tofu are crafted with care, leaving a feeling of happiness until the very end.
