This is a sake brewery that has been in operation since the Meiji era, and it is the only sake brewery in Kato City. It is wonderful that it is brewed with Yamada Nishiki rice grown in the northern Harima region and pure water from Gohoshan. The sake has a moderate sharpness and a smooth mouthfeel. It can be enjoyed chilled, at room temperature, or warm. There are also brands named after local places, allowing you to feel the charm of the area. The Junmai genshu made from Yamada Nishiki has a remarkable umami and a clean aftertaste, which is well-received by my friends.
