Upon entering, there is a soba-making space on the right, and I am happy to see the craftsmanship. The hand-made noodles, ground with a stone mill, have a gentle aroma, and when you take a bite, the sweetness comes through. The width of the noodles is beautifully uniform, and you can feel the firmness when you chew. The dipping sauce with wild vegetables has a rich flavor, allowing you to enjoy the taste of the wild vegetables as well. The fried young corn stands out for its sweetness and left a strong impression. With a bar-like atmosphere, you can also enjoy drinks, making for a satisfying experience along with the soba.
