It was an exciting experience from start to finish at a location within walking distance from Kakegawa Station. The dishes and sushi, utilizing local ingredients, were well-balanced and each was crafted with care, providing a high level of satisfaction. The fluffy chawanmushi (steamed egg custard) was infused with the aroma of clams and sea lettuce, warming the body pleasantly. The soft acidity of the red sushi rice and the flavor of the seaweed from Ariake were delightful, and the substantial sushi was also impressive. I particularly enjoyed the dish of salted Spanish mackerel paired with new onions, as well as the fragrant sesame flavor of the thread seaweed. Reservations can be difficult to make, but the warm atmosphere created by the many locals makes for an enjoyable time.
