Variety Soba with Vegetable Tempura Trio
Soba noodles made by kneading colorful and fragrant ingredients into refined flour. The ingredients change on a cycle of about four weeks, including cherry blossom, shiso leaf, and yuzu citrus.

Normally, herring soba is served warm, but at our restaurant, we top soba noodles with herring that has been simmered for 4 days and pour cold broth over it!! The herring's fishy smell is eliminated, making it good. Finally, pour soba water into the remaining broth on the plate to savor the flavor of the herring.
