When I opened the heavy sliding door, I was greeted by an elegant interior and the background music of a koto, which lifted my spirits. The meat, aged in salt koji from domestically produced brand pork, was very tender, and the umami spread with every bite. The batter, fried in rice oil, was crispy thanks to the fresh breadcrumbs, and it had a light texture with minimal greasiness. The edge pork cutlet had a surprisingly rich flavor, providing a satisfaction that belied its status as a 'leftover' piece. With the salt and dressing provided on the table, I could enjoy variations in flavor, making it possible to eat without getting bored until the end. There is also a takeout window, so I am happy to be able to enjoy this crispiness at home.
