They offer both 100% buckwheat and 80% buckwheat, showing their dedication to soba. The thick and rustic soba releases its aroma and sweetness the more you chew. Even the 100% buckwheat is not crumbly, and it has a firm texture and a smooth throat feel that is pleasant. The dipping sauce is rich with the umami of bonito and kelp, enhancing the quality of the soba. The soba broth after the meal has a gentle flavor, leaving you satisfied until the end.
