A beloved local restaurant for handmade soba

The interior seems to be a renovated space, but it has a bright and calming atmosphere. The hand-made soba is medium-thick and has a good texture, with a slight sweetness in the aftertaste. The well-prepared noodles have a nice chewiness, and can be enjoyed both cold and in a warm broth. The dipping sauce has a perfect balance of dashi and kaeshi, with just the right concentration to enhance the flavor of the soba. The service flow is calm, allowing me to slowly savor the freshly made dish. There were many older customers, and it was heartwarming to see how much the place is loved by the locals.
