This shop is located along the national highway, making it easy to stop by casually. Water and tea are self-service, so you can relax without any hesitation. The soba noodles are thin and slightly short, going down smoothly and feeling light. The dipping sauce has a strong umami flavor from the broth, which pairs well with the fragrant buckwheat flour from Shinshu. The tempura has a light and crispy batter, without being greasy, making it easy to eat. In addition to shrimp and whiting, you can also encounter tempura made with wild vegetables, which brings a subtle bitterness that reminds you of the season.
