The meat is fluffy yet has a good elasticity, while the skin is crispy and fragrant, providing an enjoyable texture. The slightly sweet sauce enhances the umami of the eel. The rice is a bit firm, creating a very good overall balance. The liver in the liver soup also carries the aroma of charcoal, making it easy to eat and satisfying until the very end.
