Exquisite handmade soba in a hidden mountain retreat

Handmade Soba Kishimoto is a soba specialty shop located in a quiet, old house deep in the mountains. The handmade soba enjoyed around the irori (traditional Japanese hearth) has a delicate aroma and perfect texture that captivates diners. The soba made with natural yam, in particular, offers a wonderful harmony of soba's fragrance and chewiness. The handmade desserts are also well-regarded, making this a heartwarming establishment.

The old folk house shop that you reach by progressing along the mountain path has a comforting atmosphere from the entrance. The handmade soba noodles are mixed with local natural yam, and the aroma spreads gently. First, when I put it directly in my mouth, the thin noodles snapped and I felt a refreshing sweetness. Next, when I tried adding a little salt, the flavor of the soba was further enhanced. Eating it with freshly fried tempura created a perfect match between the crispiness and the smoothness of the soba. After the meal, I spent a leisurely time with soba broth and homemade sweets, soaking in the happy afterglow by the irori (traditional Japanese hearth).
