It's enjoyable to wait while watching the fish swim in the store. They prepare the sashimi right there, so it's plump and very fresh. The sashimi of sea bream is particularly impressive, with a clear umami flavor. You can also enjoy flavors like Spanish mackerel, red snapper, and mutsu, which are exciting as they are not something you encounter often. The experience of them scooping and grilling shellfish right in front of you is also very engaging. A dish that highlights the aroma of sakura shrimp was well-seasoned and very much to my liking.
