I really like fluffy and light okonomiyaki. The noodles are boiled from their raw state and loosened on the griddle, with the moisture perfectly adjusted, providing a pleasant aroma and texture. The sweet cabbage is steamed without being pressed, resulting in a nice fluffiness. The unique sauce is refreshing, with a moderate acidity that pairs excellently with the savory flavor of the pork belly. It's also fun to add more toppings, and the green onions being at room temperature helps the okonomiyaki stay warm longer. There are many flyers on the wall, and a TV broadcasting sports, creating a lively atmosphere even in the compact store.
