The shop is located in a quiet place surrounded by rice fields, and I was a bit surprised the moment I arrived. As I passed through the noren (a traditional fabric divider), I found many regular customers at the counter and on the raised seating area, and the atmosphere in the shop was pleasantly lively, which made me feel at ease. The sushi, carefully prepared by the chef, featured fresh ingredients with a good thickness, and the melt-in-your-mouth texture of the fatty tuna and sea urchin was particularly impressive. The handmade soup bowl had a gentle dashi (broth) that paired perfectly with the sushi. I also tried the sashimi and vinegared dishes, and even the shellfish and blue fish had a sharp flavor that made it hard to put down my chopsticks. I was delighted to be able to enjoy such authentic sushi in a quiet countryside setting, and the happy aftertaste lingered all the way home.
