Yamagata When you think of Yamagata, delicious soba comes to mind. Among them, I visited Shojiya, which has a high rating on Tabelog and is very popular. I went to the Gotensaki Nanokamachi branch, where you can enjoy a more nostalgic atmosphere rather than the main store. A la carte ◇ Thick omelet ◇ Pickles ◇ Nameko mushroom with grated daikon ◇ Tempura soba x2 (one with added tororo) ◇ Nameko soba ◇ Yamakake soba The variety of soba appetizers is definitely a delightful point. Everything was delicious, and the portion sizes were just right. I indulged in a lot of luxurious dishes, thank you for the meal.

【Yamagata】 Founded during the Keio era as a soba tea house at the moat of the San-no-maru of Yamagata Castle, "Shojiya" is the oldest establishment in Yamagata. I made a repeat visit to the only directly managed branch located at the new landmark "Nonaka-machi Goten-saki" that was born in Nonaka-machi, Yamagata City. ★ 2-7-6 Nonaka-machi, Yamagata City, Yamagata Prefecture ★ 1,000–3,000 yen/person A la carte ◇ Assorted platter ◇ Tempura seiro (with added tororo) The cooking of the noodles might have been a bit off compared to usual...? A downside is that the tororo absorbs the dipping sauce, leaving it insufficient. The soba at Shojiya is made from 100% domestically produced soba, primarily using "Dewakawari" from Yamagata, which is coarsely ground using their own stone mill. Be sure to enjoy the traditional hand-made "Toichi soba (Yabu soba)" made with 100% soba flour and 10% binding agent at least once.

Completion of second floor expansion work for "Soba Restaurant Shojiya Goten weir Nanokaicho This project started with Maruar, with whom we worked on the Tongari Building. The design is by Tatsuro Shibuya, the same architect who designed the Kaminoyama house in the recently broadcast "Dramatic Before". The project involved the renovation of the second floor of a store by removing the ceiling and building a staircase to create a new use for the space. Yamagata Construction and Takeda Engineering were responsible for the construction around the staircase. All of the work was done with difficult openings and reinforcement of the wooden structure, but they did a wonderful job as expected. The store interior work on the second floor was done by Top Art Section. The furniture work was done by TIMBER COURT, of course. [Team Tongari Building]. Thank you very much for your referral, Mr. Aida! Our craftsmen also did a wonderful job. In the center of the store on the first floor, a hole was made through the ceiling, and an elegant staircase with a steel handrail and solid treads embedded with brass was taken up to the second floor, where a Japanese modern style rafter roof and a lighting owl create an outstanding presence. The furniture by TIMBER COURT is a perfect match. Mr. Shibuya really gave us a great experience and a great learning experience. Thank you very much. It was a great honor to have dinner with you. Thank you Marouard and TIMBER CORUT for always inviting me. And last but not least, thank you to Mr. Shoji, the president of the company, who is truly a wonderful person and we are grateful for the opportunity to work with him on this project.
