The couple runs the place, and the warm atmosphere is immediately conveyed. It's exciting to see freshly made Shinshu soba through the glass. The soba has a rich aroma and a smooth texture, bringing happiness from the very first bite. The dipping sauce is gently thin, tailored to the Fukuoka style, and I appreciate the thoughtfulness of being able to request a stronger version if desired. The tempura, fried in soba flour, has a light batter, and when a little bit of seaweed salt is added, the sweetness of the ingredients is enhanced. After the meal, slowly savoring the light soba broth provides a refreshing conclusion to the experience.
