Upon entering the store, the unique aroma of the miso brewery spreads gently, lifting my spirits. It is a shop that also serves as an office, with various types of miso, tamari, sweet sake, and miso sauce displayed, and I was able to sample and taste them. The staff kindly explained the differences in types, making it enjoyable to choose. When dissolving the grain miso while crushing the grains, the aroma becomes prominent, giving the miso soup a fresh flavor. The two-and-a-half-minute miso is simple and well-balanced, and I found it easy to eat even for those who are not fond of red miso. The moromi miso pairs well with tofu and cucumbers, and the tamari can be chosen from rich to light according to preference, which was satisfying.
