From a seat where I can see the chef's skill right in front of me, I feel excited from the very beginning. There is no fixed menu; instead, dishes are served as a chef's choice reflecting the season. The sashimi, especially the red sea bream and octopus, is particularly good, and the squid paired with salt enhances its deliciousness. The simmered sweetfish with roe has a sharp aroma of sansho pepper, and the gentleness of the turnip steam dish lingers in my heart. The tempura is lightly salted with butterbur and wild yam, while the shabu-shabu of abalone and oysters showcases remarkable texture and flavor. I even got to enjoy the root-end of the water celery, and I thoroughly savored the chef's skill and the charm of the ingredients.

It began with excitement at a seat where I could see the careful hand movements right in front of me. There was no fixed menu; instead, they served seasonal ingredients little by little according to the flow of the day. Each piece of sashimi, which brought out the umami, had its own character, and the squid enjoyed with salt, the lightly processed skin of the sea bream, and the firm octopus were particularly impressive. The large bowl of steamed turnip was rich with the essence of the fish roe, providing a comforting flavor. The shabu-shabu featuring abalone was delightful when quickly cooked, with both aroma and texture being excellent, and the crunchy texture of the root-end celery was also enjoyable. It was a happy time where I could savor the skill up close while chatting with friends.
