Upon entering the restaurant, I was captivated by a young woman rhythmically cutting soba at the counter. The sound resonated pleasantly throughout the small space, creating a warm atmosphere. The service was quick, and I was delighted when the seiro arrived shortly after I sat down. The flat, slightly wide soba had a pale color with visible grains, allowing me to enjoy both its elasticity and smooth texture. The dipping sauce had a rich dashi flavor with a hint of sweetness, making it a perfect match for the soba. The hearty kenchin soup also had a gentle taste, and in the end, I was able to relax by mixing it with the soba water.
