Mat Joheun Jokbal

The signature dish is front leg jokbal (pig's trotters), characterized by its chewy texture and moist meat juices. The combination with shrimp sauce, garlic, chili, ssamjang (dipping sauce), and lettuce is excellent, and eating it with spicy Cheongyang chili adds more umami. The makguksu (buckwheat noodles) is also plentiful and delicious, making it a great accompaniment to jokbal.
