The interior of the restaurant is clean and you can see the soba-making process in the workshop at the back, which is exciting. The handmade 2:8 soba has a uniform thickness and a gentle texture. The dipping sauce has a light bonito aroma, with a subtle sweetness that is elegant. The chilled tanuki soba is fun with toppings like tempura scraps, egg yolk, and kaiware radish, along with green onions, grated daikon, momiji oroshi, and sesame. I've heard that the duck soba is also popular, and the thick duck meat pairs well with the sharp dipping sauce. At the end of the meal, adding soba-yu (soba water) spreads the flavor of the dipping sauce and is comforting.
