A small salad is served first, which makes me feel happy. The noodles are made with buckwheat flour from Hokkaido, blended according to the season, and they have a pleasant aroma and a nice texture. The dipping sauce is sweet and mild, pairing well with the soba. The maitake mushroom tempura is delivered directly from the production area, allowing you to fully enjoy its aroma and texture. There are various ingredients for the tempura, including shrimp, pumpkin, sweet potato, eggplant, kogomi (fiddlehead fern), udo (Japanese wild ginger), and butterbur. If you mention any ingredients you dislike, they will prepare a different small bowl for you, showing their warm consideration.
