The aroma of the dashi spreads gently, and the taste is mild. It uses domestically produced wheat flour, and I am happy that it is made without relying on additives. You can choose from sauce, salt, or soy sauce according to your preference, and you can enjoy two flavors at the same time. The inside is creamy with a light texture, and the crunch of the white leek pairs very well. They serve freshly shaved bonito flakes right in front of you, so the aroma is rich and irresistible. There is also a dish called 'takohachi,' and combined with the attentive staff, it makes for a pleasant experience.
