There are many fish side dishes, and just looking at them is exciting. The burdock and lotus root salad has a nice kick from the chili and carrot, and while the flavors are well-infused, it retains a crisp texture, which was great. The salmon belly is wonderfully fatty, melts in your mouth, and is tender enough to enjoy even the cartilage as is. The saltiness is just right, making it perfect on its own or as a companion to sake or white rice. The simmered fish is also recommended; the simmered flatfish has a good balance of sweet and savory, and the flesh was fluffy. It's easy to buy at the department store basement, and the selection is satisfying at home.
