As I entered the restaurant, the gently wafting aroma of bonito flakes whetted my appetite. First, I lightly quenched my thirst with a draft beer and an appetizer, then leisurely started in a relaxing tatami room. The recommended bonito sashimi was firm and packed with umami, leaving me impressed. The restaurant's signature bonito broth tantanmen allows you to choose the level of spiciness, so you can enjoy the stimulation to your liking. The thin, curly noodles pair well with the rich broth, and adding chili oil further enhances the flavor. The crispy cheese we shared was also addictive, and before I knew it, I couldn't stop using my chopsticks until the end.
