First, the ordered mackerel sashimi is rich in fat and has a smooth texture. The mackerel nigiri has a different flavor, and the balance with the rice is very good. The quail skewers can be enjoyed with the shell, and the crispy texture and just the right amount of saltiness are delightful. The fried rockfish is crispy and delicious, making you want to have some sake. I was taught to add a little shichimi to the mackerel nigiri, and when I tried it, the umami was further enhanced. The friendly chef responds gently to our requests and recommends sake that pairs well with the dishes.
