The flavor, made with carefully prepared dashi and Hiroshima-produced barley miso, is gentle and deep, finished one bowl at a time. It is generously poured into a large bowl, and the ingredients are substantial, providing a sense of satisfaction. The rice is a brand from Hiroshima and Koshihikari, with a pleasantly chewy sweetness, and the rice balls have a refined taste. The homemade tofu is enhanced by salt, bringing out its umami and even a rustic sweetness. The walnut brownie is subtly sweet, with a rich chocolate flavor that comes through clearly.
