It's a style where you go after making a reservation, and if you communicate any disliked ingredients or allergies, they will prepare accordingly for that day. The plates are filled with side dishes that make the most of fermented flavors, and the combinations of seasonal wild vegetables and greens are enjoyable. There are also macrobiotic classes, and the gentle flavors, which incorporate a bit of dashi and cheese, leave a lasting impression. The herbal tea that changes color, the smooth acidity of the iced coffee, and the sweet sake truffles made with blue soybean flour are all very delicious.
