The soba noodles have a nice chewiness, and the overall texture is thick and well-cooked. There is also a version with shiso and green onions, which adds a refreshing aroma. You can also choose to include udon, which is boiled before being grilled, enhancing its savory flavor. Since condiments are not placed on the table, you can ask for them when needed, and they will be happily provided.
