I was able to see the craftsmen hand-cutting soba at the workshop on the first floor, which put me in a joyful mood even before eating. The soba that was served had a uniform square cross-section and was fairly thin, with a gentle elasticity when bitten. The dipping sauce was not too salty and had a balance typical of Japanese cuisine, making it just right even when soaked generously. The tempura of spring vegetables was crispy, allowing me to fully appreciate the flavor of the ingredients. The grilled sweetfish and tempura of smelt were also fragrant, making it hard to put down my chopsticks. The soba was served in two layers, providing ample volume, and I left the restaurant feeling completely satisfied.
