There is a spring nearby, and you can enjoy soba made with that water. When you take your seat, they first serve you a small glass of water, which has a refreshing taste. The soba is made from buckwheat flour from Okutone, ground and boiled immediately after being made, which enhances its aroma. The noodles are rustic and chewy, providing a texture that reflects the quality of the water. The dipping sauce is slightly spicy, complementing the noodles well. The tempura is also fragrant, with the anago (conger eel) and maitake mushrooms being particularly impressive, and the walnut garnish adds a fun touch.
