Here, they prepare domestic eel fresh for each order, grilling it to a fragrant perfection without steaming. The flesh has just the right amount of chewiness and is juicy, with a wonderful contrast to the crispy surface. The eel goes perfectly with the liver soup, and a sprinkle of sansho pepper enhances the aroma and makes it even more delicious.
