You can see the craftsman's hands over the counter and enjoy freshly made sushi. All the ingredients are fresh; the yellowtail is moist and full of flavor, while the shrimp has a popping texture that is impressive. The pleasant elasticity of the sea bream and the melting texture of the scallops are also appealing, and the aroma of the kaiware radish, which is finished with kelp, provides a nice accent. The small bowl of mekabu has a smooth texture that goes down easily, making it perfect as a side dish. The soup, rich in fish flavor, has a pleasant aroma and is comforting. The selection in the display case is also impressive, and the efficient service makes for a pleasant experience.
