This is a convenient shop located in the food court of Morella Gifu. You wait at the front of the store for your order to be called by number, making the process smooth. They ask you about the green onions before handing over your order, and you can freely add pickled ginger, aonori (seaweed), and mayonnaise at the side table. The bokkake yakisoba contains beef tendon and konjac, and the spicy flavor of the sauce is addictive. The omusoba (omelette yakisoba) pairs well with fluffy eggs and cheese, and I also liked the chewy texture of the noodles. If you order the large size, the portion is substantial and satisfying.
