Since I made a reservation, the seats were already set up with pots and ingredients, which made me excited. The signature dish, Agu pork shabu-shabu, has a light fat that spreads umami in the mouth. The flavor differs between the shoulder loin and the belly meat, and it's enjoyable to compare the textures while having them with vegetables. The broth is slightly sweet, and I could feel a change in flavor when I added island shallots and jimami tofu along the way. When I added Okinawa soba at the end, the noodles soaked up the soup, making it impossible to stop eating until the very end. The attentive service from the staff and the live performance of the sanshin resonating in the restaurant made for a delightful time throughout the meal.
