The Japanese food was beautiful, and I felt that each dish was made with care. From the very first appetizer, there were creative touches like white miso with fruits and cheese, and the layering of flavors was irresistible. The seared yellowtail and returning bonito sashimi had a rich umami flavor, which was very satisfying. The monkfish liver, mashed fava beans, rolled omelet, and simmered vegetables were all crafted with care, making it hard to put down my chopsticks. The sake selection was wide-ranging, and I was excited to encounter types I usually don't try. The soft-shelled turtle dishes had no unpleasant smell and were surprisingly delicious, allowing me to fully enjoy the charm of Japanese cuisine throughout the meal.
