The improved firmness of homemade noodles The restaurant I wanted to go to was closed for the holidays...so when I came here, I could not get in on the first round...so I had to wait in line...I actually hate waiting in line, so I don't do it unless I'm really interested. ...In Nagoya, the only times I've ever stood in line were at "Hydrangea" and "Ikiru"...I wanted to try the "Ajitama Shio-soba" (๑-̀ㅂ́)و✧ You can't hear any clutter in the restaurant at all here... ...There's no oil frying, so it's quiet and the background music is pleasant. This sound is also very intriguing, but it's not easy for the girls to eat carefully so as not to make any noise! I'm an Edo girl, so I want my Soba noodles to be served with gusto! The taste is...chicken stock and simmered dried fish broth, light and tasty. I like noodles that are curly, but these improved homemade noodles are flat and medium thin... they're hard and firm... but they go well with the soup and are really tasty. But it is a light ramen! I should have had a large bowl of ramen because it was too small.
