The dishes prepared by those who have honed their skills in Osaka are all meticulously crafted and delightful. The abundance of seafood from the Setouchi and San'in regions allows for enjoyment of thinly sliced sea bream and the fragrant grilled Spanish mackerel. There is also a unique crocodile dish (referring to shark), which surprised me when it was served as a piece of sushi. The dish made with the bones of the sea bream has a traditional flavor that seeps in gently. If the timing is right, you might encounter Hiba beef, and the fragrant grilled cuts and creative tongue dishes were very impressive. Local sake and beer pair well, making for an enjoyable time until the end.
