This dish uses the high-quality soy sauce 'Shimosa Soy Sauce' made in a wooden barrel by 'Chiba Soy Sauce', a long-established soy sauce shop founded in the 7th year of the Kaei era in Chiba Prefecture. The chicken thigh meat is marinated in freshly ground garlic and special soy sauce for over a day, then fried in carefully selected oil to a crispy finish.
