Tokyo Shinsen The owner, Mr. Ajuta, is from Sushi Zaibu and is full of passion for aged sushi. He is always eager to learn and changes the soy sauce, rice, and other ingredients to keep his restaurant up-to-date. Omakase Course Pickles Bowl of rice Flounder with soy sauce Eel and Soy Sauce Eel monkfish liver It was really delicious and sweet like a dessert pudding. Even those who don't like monkfish liver can eat it! Steamed egg custard and lily bulb The taste is not too strong and this combination is sure to be delicious. Nigiri Haruko sea bream Sumi squid Kohada Large fatty tuna Chutoro (medium fatty tuna) Akami Unotan They used a whole box of sea urchins to make the rolls. The rolls were so rich that I was too happy to eat them. Clam No fishy smell at all, perfect texture and saltiness. The small bowl of nodoguro (sea slug). Shrimp Conger eel Anago (conger eel) Drinks Sake & wine pairing All the sommeliers were humorous, kind and gentle. They explained each dish in detail, and we were excited to enjoy the delicious food.
