I was excited to learn that a restaurant loved for a long time in Tokyo could be experienced in Izu Kogen. The flow from the amuse-bouche to the final tea was beautiful, and everything was delicious throughout. The foie gras royale was rich, with a melt-in-your-mouth texture reminiscent of elegant chawanmushi (savory egg custard). The penne had a wonderful aroma of gorgonzola, and the harmony with the sauce was superb. The salmon and scallops wrapped in pastry combined with the white sauce created a new umami flavor, and the pufferfish pané was outstanding. The dessert, grapefruit jelly accompanied by bavarois, and the refreshing drip coffee all contributed to a high level of satisfaction.
