I wanted to serve tonkotsu ramen, so I am making tonkotsu soup separately from the original soup without sparing any effort. I also kneaded the noodles specifically to be cheap and delicious. Please give it a try! The chashu has a thickness that allows the fat to melt out.
Baku Mori Chashu Tonkotsu Ramen
This is Kyushu tonkotsu ramen topped with 130g of chashu. The tonkotsu broth is simmered slowly for a long time. The noodles are homemade ultra-thin noodles, and you can choose the firmness to your liking! Very hard!? *Also available at the Tatsuno store.
