The fresh wheat gluten made with the clean water of the Nagara River is chewy and has a rich aroma. There are many varieties, such as sesame gluten and millet gluten, making it fun to choose. I was happy to learn various ways to eat it, such as grilling it and dipping it in miso or adding it to clear soup. The gluten dumplings wrapped in bamboo leaves had an excellent compatibility with the flavor of mugwort and the refreshing sweet red bean paste. Dried flower gluten and wheel gluten are also available, making home-cooked dishes more colorful. Thanks to the friendly and polite service from the staff, I was able to enjoy my shopping time.
