I casually stopped by the basement food floor and was excited to see a row of yuba and tofu side dishes. I chose a tofu shumai bento with edamame and ginger rice, and the fluffy shumai and crunchy edamame texture were the best. It also included fried yuba, egg rolled with soy milk, and simmered hijiki, with a gentle flavor spreading with each bite. The warm yuba and mentaiko Japanese-style ankake rice bowl was also very satisfying when heated. The container that separates the rice and sauce is easy to use, and it's convenient to finish it quickly in the microwave. With a variety of healthy bento and rice bowls available, I found myself hesitating in front of the showcase.
